The Good Guys, Part 2

I get nervous if a post becomes too long, so have taken these additions to the Friendship Cake from The Good Guys in My Cranberry Apricot Bread and left them here for anyone interested.

Additions I have tried and everyone has gobbled up:

For one recipe that makes two loaves or one bundt, or 24 muffins, add to batter:

1 can pumpkin or 2 cups fresh cooked pureed pumpkin

1 bag chocolate chips

1 tsp cinnamon

2 tsp turmeric

¼ tsp cayenne pepper

½ cup walnuts

1 tsp vanilla


1 cup baking cocoa powder or 4 squares dark baking chocolate, melted

1 cup chocolate chips

1 cup dried tart cherries

nuts of choice if desired

pinch of cayenne pepper


juice of 2 lemons

zest of 2 lemons

3 Tbsp poppy seeds

1 tsp almond extract

¼ tsp fresh grated nutmeg


1 cup dry roasted unsalted almonds, ground in processor

1 tsp almond extract

1 cup dried cherries or 2 cups fresh cranberries


2 cups fresh or frozen blueberries

1 tsp cardamom

1 tsp cinnamon

1 cup chopped walnuts or pecans


2 cups grated zucchini

1 bag chocolate chips

1 cup chopped walnuts

1-2 tsp cinnamon


1 can crushed pineapple

½ shredded unsweetened coconut

1 tsp cardamom

1 tsp cinnamon

    Thanks for all the variations. I didn’t know the Cranberry bread was from the starter. I’m always looking for ways to use my starter, and my son is always happy to eat it!
